Anyone know good ideas for veggies at christmas dinner?

Im in charge of the vegetable dish for christmas dinner…any interesting ideas?

Oh my gosh, I had to do vegetables too on Thanksgiving for 19 people and it turned out great! It was easy, looked fabulous, held well in a covered deep pan for my hour travel time with only a 1/2 hour heat up in a low temp. oven while we were having appetizers and talking. Here’s what I did:

Oven Roasted Vegetables

One 8 oz. package of Button Mushrooms
2 Zucchini
2 Yellow Squash
1 Red Onion
2 Bunches of Broccoli
1 Bunch Cauliflower
1 small package of Grape Tomatoes

First, I cut up all the veggies (Zucchini, Squash and onion) into 1 inch pieces) Broccoli and Cauliflower were cut into 1″ Florette’s, I cut the button mushrooms in half and left the tomatoes whole. Then I put them into a very large bowl and added my seasonings of Olive Oil, melted unsalted butter, basil, garlic and onion powder, oregano, cracked black pepper and sea salt. Then, I got 2 cookie sheets with a one inch lip and spread the veggies into an almost flat layer on each pan. I set my oven temperature to 400 and put them into the oven for 45 minutes. They were beautiful and tasty! Then, I loaded them into a Red Casserole dish, covered it with foil and we were off. Once I got to my destination (an hour later), I put them into a 250 degree oven for 1/2 hour, tin foil still on and they were perfect! I garnished them with chives and flat leaf parsley when we got all the food on the buffet table. So, I hope this helps you out today and Merry Christmas to you!
