Christmas recipes for 2!?

It will only be me, hubby and baby for Christmas. What food can I serve that will be easy to make and not to expensive. If you can give recipes it would be great! Thanks!

THIS CAN BE DONE THE DAY BEFORE – SO MORE TIME TO SPEND WITH HUBBY AND BABY ON CHRISTMAS MORNING – WITHOUT HAVING TO MISS A THING.
STRESS FREE CHRISTMAS!!!!
One of my favourite dishes – cheap and tasty.
4-6 Chicken Thighs (boned and skinned)
4 Sausages(spicy is great with this dish)
Cured Ham(Proscuitto type)

Lay a length of Clingfilm out on the work board.
Then Lay around 6 slices of ham(overlaping as you go) over the top of the cling film.
Place your chicken thighs on top of the ham (try not to have any gaps in the chicken.
Taken sausage out of the skin and press along the middle lenght of the chicken.
Season with whatever herbs etc you like.
Now roll the clingfilm over til it forms a log(roll it tight – it may roll over more than once.
Keep the clingfilm on and tighten so it looks like a christmas cracker. Make sure it is sealed tight at the end. Now roll in tinfoil the same way -tight allover and the ends.
Place in a large pan of boiling water for approx 30/40 minutes.
Remove and allow to cool – Place in fridge for Christmas day.
Prepare Potatoes and veg and leave them in a bowl of cold water
On Christmas day – about 1 hours before you want to eat – remove the Chicken Roll from the fridge. Unroll the foil/clingfilm etc. You should be looking at a stripy roll of chicken wrapped in bacon. Now add a little oil to a pan on a medium heat(as the dish is already cooked) Add the roll- if its too big then half it. Brown the bacon all over and ensure the centre is hot before removing from heat. When ready remove from heat and slice into medallions and lay on the plate beside you roast/mash potatoes and veg, pour over gravy and Bon appetite.
I have made this many many time and it never fails to impress.
Fav pud – Apple Pie and ice cream or pouring cream.

I know this sounds like a lot of prep – but really only takes about 15minutes.
Hope you at least try this, if not from christmas – then another time.
