Is it “bossy” to plan a structured dinner party?

I’m planning a fancy dress dinner party for Christmas Eve. I thought it would be fun to change things up from the usual informal thing to something more classy.

Sounds like a normal, traditional, very nice Christmas dinner, but it sounds like at least some of the people you’re planning to invite haven’t been to traditional dinner parties much. They’re more used to the “food’s up, pile in guys” kind of dinner. Besides, it’s your dinner party so you give the kind you want. If you want to hire footmen in livery to serve the food, that’s your choice, not your guests’ choice. Dinner parties are not about stuffing yourself with free food as much as they are about enjoying the company and conversation of one’s friends and relatives while having a nice meal. You can’t control whether people have dessert or not, though, no matter what you do. You offer the food, but they don’t have to eat it all.

Plating up in advance, in the kitchen, would be too much like a restaurant service. You want it more personal. I’d plan a menu with a couple of courses that can or must be served from the kitchen or from a sideboard, such as soup in ramekins and a salad that’s “composed” on individual plates rather than taken out of a bowl with utensils. That way, the food comes out of the kitchen ready to place in front of guests. Easy to prepare ahead of time, too, so you needn’t spend all your time in the kitchen after the guests arrive. Then for the main course of perhaps a roast and a vegetable or side dish, serve the plates at the table yourself, from platters next to you or on a nearby sideboard, and pass them down to guests. That way, you can tailor each plate according to what the guest wants or to what you know their appetites to be. “George, can I put another slice of turkey on this for you?” “Alice, I know you prefer white meat”

I’d have a couple of canapes to go with the cocktails too since I believe no one should have more than one drink without a bit of food to go with it, especially if they have arrived with an empty stomach in anticipation of a large meal. Spacing out the food consumption, with a bit of space between courses, leaves people somewhat less stuffed at the end of the main course even if they had quite a bit of food. You might consider the more traditional service order which puts salad arriving after the meat course. It cleanses the palate and gives a bit of time for the main course to settle before dessert. Have one dessert that’s light and that even the most full person can manage a few spoonfuls of, like a mousse or sorbet, though since it’s Christmas you have to have some traditional stuff. Make it things that can be kept for later or even frozen if they’re not eaten that night, like mince tarts and shortbread.
