How to melt chocolates for molds?

I’m planning to mold them into Christmas shapes. I do not know what kind of chocolate to use. Is it semi-sweet chocolate? Can someone put the whole procedure for this. I also want to decorate the chocolate after, like drawing on ornaments on the Christmas tree shapes, what should I use to do this?

You use the kind of chocolate that you like best. Many people use different colors for molding.

They sell wafered chocolate in big bags for making candy. My guess is, if you go someplace like Walmart, and buy the cheap stuff, you´ll know it by the taste of the finished product. If you get good product from a good store, you’ll be able to taste it.

You can also use chocolate chips, or baking chocolate, I think…I have never done it, though.

Melting chocolate is one of those things you use that double boiler that you never knew what to do with, before. You put water into the bottom part, and boil it, THEN TURN DOWN THE TEMPERATURE, SO YOU DON´T SCALD THE CHOCOLATE! And put the chocolate in the upper part, and SLOWLY melt it. Too much heat will burn it, and ruin the flavor!

If you DON’T own a proper double boiler, a pot (about 2 – 3 quarts) with a pyrex glass or aluminum bowl for the top part works. Be careful not to over heat the chocolate. Pyrex or a heavy metal or ceramic bowl is better than a lightweight aluminum one, for that reason.

Check the cooking websites for more specific instructions…there might be more to it than just melting and pouring…but I don’t think so.

I make truffles from time to time, and have to melt.

Don’t do the microwave thing…too risky. Again…it’s easy to burn it.
